I'm a bit light on outfit posts thanks to the recent snowstorms so I thought I would re-share this recipe for Nigella Lawson's Chocohotopots that I first posted back in 2012. Chocohotopots have been one of my favorite desserts for as long as I can remember. It's simple, quick and the perfect portion. I've introduced it to quite a few friends over the years and I even brought my own ramekins when I visited a friend in DC so we could make them. As I'm sure you've seen on my Instagram, I make them quite often!

Ingredients

  • 1 stick unsalted butter (I'm lazy and use salted and it tastes just fine)
  • 4 ounces (1/2 cup) semisweet chocolate, with 60 percent cocoa solids
  • 2 eggs
  • 3/4 cup superfine sugar (again, I'm lazy so I use regular sugar)
  • 3 tablespoons all-purpose flour
  • Special equipment: 4 (2/3 to 1-cup capacity) ramekins
Directions
  1. Place a baking sheet in the oven and preheat to 400 degrees F.
  2. Butter the ramekins (not from the full stick) or use non-stick cooking spray.
  3. Melt the dark chocolate and 1 stick butter together, then set aside to cool a little.
  4. Mix the eggs with the sugar and flour with a hand whisk and beat in the cooled butter/chocolate mixture.
  5. Divide the mixture between the 4 buttered ramekins.
  6. Bake for 20 minutes, by which time the tops will be cooked and cracked and the chocolate gooey underneath.
  7. Let cool and enjoy!!! :D

Some more looks at the finished product because who doesn't love a good Instagram?

If I had a date for Valentine's Day I imagine I would wear something like this. Cozy, but still showing a bit of skin. I don't really have much red in my closet so burgundy will have to do. I hope everyone who has someone to celebrate with enjoys their plans! I will be watching a Good Eats chocolate marathon on the Cooking Channel. WOO!

Hello pre-snow front yard. I wore this two weekends ago to do some shopping with my Mom. We went to a jewelry store, Home Goods, Marshalls, Jo Ann Fabrics and the dollar store and guess what? I didn't spend a dime! So proud of myself, ha ha. I've been very well behaved so far this motnh and have only bought gas and groceries! GO ME!

Let part 2 of my photo diary commence! Here's the rest of what I got up to on my Potter filled trip. As usual I took hundreds of photos so I had to narrow down quite a bit.

Today's the day for my Celebration of Harry Potter photo diary! FOOD: Decided to do a whole section on food this time since I always take pictures of my food and never do anything with them (except Instagram a few.) Everything is on Universal property except the final items, which are Disney Springs.

Always a must - Chicken Waffle Sandwich from Cletus' Chicken Shack in Simpsons Land
Chips & Salsa and Chicken Tacos from Antojitos - this is one of my favorite restaurants in CityWalk (Universal's shopping and dining destination that sits between both parks)
Pulled Pork Sandwich from Hard Rock
Cornbread and Marghertia Flatbread from NBC Sports Grill. Cornbread is a must, flatbread is just okay. Try to sit at one of the game tables, we were at the Foosball table!
Hands down favorite dessert on Universal property (so far...) Flourless Chocolate Cake from Toothsome Chocolate Emporium
French Toast from Trattoria del Porto at the Portofino Bay hotel
One of my favorite treats from The Wizarding World of Harry Potter! Cornish Pasties from The Three Broomsticks in Hogsmeade at Universal Islands of Adventure (they also serve them in Diagon Alley at the kiosk near the stage)
Breakfast from the Bayliner Diner at Cabana Bay hotel (yes, I like pepper)
Chocolate ice cream at Florean Fortescue's in Diagon Alley at Universal Studios (my friends recommend Earl Grey and Lavender, Clotted Cream and the soft serve Butterbeer, but I'm picky so I stick with chocolate)
Pepperoni Pizza and Roasted Garlic & Olive Oil bread from Portobello at Disney Springs (my friends and I weren't too fussed about this place, too overpriced for what it is)
